Vanilla Plum Crumb Cake
I’ve been sitting on some delicious ripe plums waiting to make this cake and share it with you guys. I felt brave enough and it finally felt cool enough to turn my oven on this weekend. This cake combines 3 of my favorite things: a plush vanilla specked cake, stone fruit, and a lightly spiced oat crumb. I used to make a version of this at Prima with pears and it was just so delightful with a cup of coffee. The star of this recipe is the cake base, it’s got the most perfect texture and stays moist for days. It’s a great vehicle for any ripe fruit you find in your care during these last few weeks of summer.
