I think if I had to choose one flavor to bake with for the rest of my life, it would be toasted black sesame. The savory, nutty, and slightly bitter flavor enhances and pairs so wonderfully in sweet pastries. This pie might be one of my favorite ways I’ve used black sesame, it was such a no brainer to pair it with banana. Anyways, I promise this is the last banana recipe for a while — stone fruits are so, so close!

Toasted Black Sesame Banana Cream Pie

makes 1 — 10” pie, serves 10-12

x1 batch flaky butter pie crust, baked

x1 batch toasted black sesame pudding

2-3 bananas, ripe but firm

1 1/2 cups heavy cream

pinch of salt

1 tsp vanilla

toasted black sesame seeds and maldon for garnishing
