If you’re also panicking about what the hell to make for dinner on a day so hot that even turning the stove on seems absurd — I’ve got you covered. You will need to turn your stove on but only for like 10 minutes, I promise! Growing up, my mom would make these cold noodles, or a variation of it, all throughout the long and sweltering LA summers. The sauce comes together in seconds, a few pantry staples that everyone should have, and the buckwheat noodles a mere 3-4 minutes to boil until tender. I personally like cucumber, kimchi, scallion and a soft egg on top but whatever crunchy cold veggies you have in your fridge work splendidly. This is my ideal hot weather meal, it’s satisfying but doesn’t leave you feeling more sluggish and restless in this extreme heat. I hope ya’ll are staying inside and staying cool this week!
