I have always been such a homebody. When I was a kid, anytime it poured rain on the weekend (quite rare, I grew up in LA), I would joyously spend all day flipping through my cookbooks until I selected a baking project. Those days that were centered around being at home, in the kitchen baking, were my favorite. There was no pressure to make the most of my weekend being social or enjoying the nice weather. I know when it’s the dead of winter here and the yearning for sun and warmth gets unbearably high, the last thing you want is another snow day. But these winter months are always a great (if not forceful) reminder to me to slow down and appreciate the lovely solitude you can find inside your home. I made this lemon almond poppy loaf 3 days ago, and have been eating a slice for breakfast every day since. It’s still as moist and delicious on day 3 as it was on day 1. A feat that really only almond flour can achieve.
