Chunky soup > smooth soup. Not to be a smooth soup hater (I enjoy the occasional puréed squash soup) but chunky soup supremacy in my kitchen. I love a good, hearty soup where you can distinguish all of the little components that vary in texture and flavor to make a soup satisfying and delicious.
When I feel the first little inklings of a slight breeze indicating fall might be upon us, I run to my kitchen to make a pot of tortellini soup. You could easily swap out the tortellini for a can of drained white beans to make this gluten free, or add in 1/3 cup of dry lentils. And if you don’t like fennel swap it out for celery. Leave out the sausage and swap chicken broth for veg broth for a vegetarian soup. Make this soup your own <3
