I was about to start off this post by saying “happy new year!” But then realized we are almost halfway through January and the relevancy of that statement might have passed….

If you’ve noticed that my Substack has been dormant for the past two months, I’m sorry and I promise I’m back. The end of last year was a chaotic flurry of concurrently juggling family in town for the holidays, this mysterious flu like virus that seems to linger for weeks, and opening a bakery (!) among other things. More on the latter soon. That’s all to say, I’ve been busy and craving some stillness and alone time more than ever. Yesterday Jordan and I both had the day off and absolutely nothing planned — a pretty rare occurrence. I made us these crispy corncakes for breakfast, and I think they single handedly gave us the energy to clean our apartment from top to bottom and do like 3 loads of laundry. I’m already looking forward to next Monday when I can make us these corncakes for breakfast again, they were pretty phenomenal slathered in salty butter and this insane whipped date honey we got from a trip to Philly over thanksgiving. Anyways, as always thank you for sticking around and I’m excited to share some things this month, like my sourdough journey (I made my first ever loaf just last month!), and my formula for turning (almost) any recipe gluten free.
