You may be distracted by what’s on top, but the star of this recipe is actually the plain and unassuming single layer of cake hiding underneath. The citrus olive oil cake of my dreams, it has never failed me for the almost 6 years I’ve had this recipe. The most plush texture, perfectly sweet, slightly savory from the healthy amount of olive oil, and not even 10 minutes of being over-baked can dry out the moist and tender crumb (I know this from experience). Perfect on its own, with a simple dusting of powdered sugar. But piled high with ricotta whip and banana jam, and you’ve got a dinner party, birthday party, or any occasion worthy beauty.
