So I literally just burned my tongue eating a spoonful of this right out of the oven — I don’t recommend doing that (even though it was worth it) but I definitely recommend making this, if not for thanksgiving then really really soon. We’re doing an apple rendition of this recipe at Le Crocodile for our thanksgiving prix fixe this year, but I wanted to share this pear version with you guys because I really feel like pears don’t get enough love. The magic of this recipe is that most of the work is done in the oven, as the pears cook down and soften and release their lovely juices they meld with the butter, maple and brown sugar to create this luscious butterscotch sauce — it’s beyond heavenly.
