I brought this to my Friendsgiving last night — my dear friend who so graciously hosted is a southern girl and I couldn’t show up without her favorite dessert. Pecan pie is a tricky one, it’s quite literally loaded with sugar and there’s really no way around that, it’s just the way pecan pie was meant to be. However there are ways to give the pie a little more depth and avoid something cloyingly sweet and corn syrupy. My favorite pecan pie has some brown butter, more brown sugar and less corn syrup (although you still need some for that classic gooey texture), and lots of salt and vanilla. Make sure to not over bake your pie, if you’re unsure pull it earlier rather than later, it’s better that it’s underbaked vs over. I love a slice of pecan pie with a scoop of vanilla ice cream.
