It’s now been 2 months since my little pastry dreams came true and I started the pastry program at Prima Brooklyn, a space that has quickly grown so incredibly near and dear to my heart. It’s been such a joy creating pastries for you guys, I can’t tell you how much all of the love and support for the program has filled me with such gratitude and creative fulfillment. Scones were one of the first things I tried to master many moons ago as a home baker, so it’s been amazing to see how many minds I’ve changed around one of the simplest, humblest pastries. To be fair, there are more bad scones out there than good (in both my and everyone else’s experience, apparently). But this scone, this scone is on its own plane of perfection. Proof: a woman came in one morning and told me that in her 40 years of existence, she had never ever enjoyed a scone and never ordered them anywhere. But one afternoon she came into Prima ravenous, and the only thing left in the case was this banana buckwheat scone. She bought it and said it was the best scone she had ever had. She now comes in and even with a full pastry case of several other options, orders a scone. I think I was put on this earth to change peoples minds about scones, so thank you to Prima for giving me the space to do that <3
