A while back I posted a photo album on instagram of some of the muffins I have in rotation at Prima. People asked me a million questions about how I got such perfect domes on my muffins. I’m happy to share that the answer could not be more simple — tulip muffin liners ! The slightly raised edges on these liners allow you to fill the cups with a little more batter than you would in regular paper liners, which then bake up into extra high perfectly domed muffins. Also, a little trick of the trade is baking your muffins for the first 10 minutes at a higher temp to really kick start the leavening and ensure a high rise, before dropping the oven temp down to finish cooking the centers. A special tool I like to use to fill the liners with batter is a 4 oz ice cream scoop, it makes scooping batter mess free and ensures each cup is filled with the same amount.
